Description

Tender, juicy chicken skewers marinated in yogurt and spices, perfect for Mediterranean flavor lovers.


Ingredients

  • 500 g (1.1 lbs) boneless, skinless chicken thighs or breasts
  • 240 ml (1 cup) plain yogurt
  • 3 cloves minced garlic
  • 60 ml (¼ cup) fresh lemon juice
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • 1 tsp salt
  • 30 ml (2 tbsp) olive oil
  • Bell peppers and onion (optional)

Instructions

  1. Make the Marinade: In a mixing bowl, combine yogurt, lemon juice, garlic, cumin, coriander, paprika, and salt. Whisk until smooth.
  2. Marinate the Chicken: Cut chicken into 2.5 cm (1-inch) cubes, add to marinade, ensuring each piece is coated. Cover and refrigerate for at least 8 hours.
  3. Prepare the Skewers: Preheat grill to medium-high heat (200°C or 400°F). Thread chicken on skewers, alternating with bell pepper and onion.
  4. Grill the Skewers: Cook for 12–15 minutes, turning occasionally, until chicken is charred and reaches 74°C (165°F).
  5. Serve: Let rest for 5 minutes before serving to allow juices to settle.

Notes

Avoid overcooking to prevent dryness. Marinate a day ahead for convenience.
