- 500 g (1.1 lbs) boneless, skinless chicken thighs or breasts
- 240 ml (1 cup) plain yogurt
- 3 cloves minced garlic
- 60 ml (¼ cup) fresh lemon juice
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- 1 tsp salt
- 30 ml (2 tbsp) olive oil
- Bell peppers and onion (optional)
Instructions
- Make the Marinade: In a mixing bowl, combine yogurt, lemon juice, garlic, cumin, coriander, paprika, and salt. Whisk until smooth.
- Marinate the Chicken: Cut chicken into 2.5 cm (1-inch) cubes, add to marinade, ensuring each piece is coated. Cover and refrigerate for at least 8 hours.
- Prepare the Skewers: Preheat grill to medium-high heat (200°C or 400°F). Thread chicken on skewers, alternating with bell pepper and onion.
- Grill the Skewers: Cook for 12–15 minutes, turning occasionally, until chicken is charred and reaches 74°C (165°F).
- Serve: Let rest for 5 minutes before serving to allow juices to settle.
