Description

Delightful muffins combining the fluffiness of muffins with sweet strawberries and creamy cream cheese, perfect for breakfast or brunch.


Ingredients

Scale
  • 6 slices of bread
  • 4 oz cream cheese, softened
  • 1 cup strawberries, hulled and sliced
  • 2 eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 cup sugar
  • Butter for greasing the muffin tin

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a muffin tin with butter.
  2. Beat the eggs, then add milk, vanilla extract, sugar, and cinnamon, and mix well.
  3. Cut the bread into cubes and gently fold them into the egg mixture until coated.
  4. Mix the softened cream cheese with sliced strawberries in another bowl.
  5. Place a layer of the bread mixture in each muffin cup, then add a layer of the cream cheese and strawberry mixture, and top with more bread mixture.
  6. Bake in the preheated oven for 20-25 minutes or until golden and set.
  7. Allow to cool for a few minutes before removing from the muffin tin. Serve warm.

Notes

For extra flavor, add nuts or berries to the mixture. Use day-old bread for better absorption and consider using whole grain bread for lighter muffins.
