Instructions
- Prepare Cheesecake Filling: Beat cold cream cheese with sugar and vanilla in a mixing bowl until smooth and creamy. Scoop the filling into small discs and freeze for about 2 hours, or until solid.
- Make Strawberry Jam: In a saucepan, cook diced strawberries with sugar over medium heat for around 45 minutes. Smash the berries halfway through, allowing the mixture to thicken and create a delightful jam consistency.
- Prepare Cookie Dough: In a separate bowl, whisk together flour, baking powder, baking soda, and salt. In another bowl, cream butter and sugar together until light and fluffy, then mix in the egg and vanilla extract.
- Combine Mixtures: Gradually add the dry ingredients to the creamed mixture, mixing until just combined. Be careful not to overmix to keep the cookies tender!
- Assemble Cookies: Take portions of the cookie dough and flatten them. Place a frozen cheesecake disc in the center, dollop with strawberry jam, and encase the filling by folding the dough over and shaping into discs. Roll in sugar for a sparkly finish.
