- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/3 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh blackberries
- 1/4 cup brown sugar
- 2 tablespoons butter (melted)
- 1/2 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix the all-purpose flour, whole wheat flour, sugar, baking powder, and salt in a large bowl.
- Whisk together the milk, vegetable oil, egg, and vanilla extract in another bowl.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the blackberries gently.
- Combine the brown sugar, melted butter, and cinnamon in a small bowl to make the streusel topping.
- Divide the muffin batter evenly among the prepared muffin cups and sprinkle the streusel on top.
- Bake for 18–20 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool slightly before serving.
Notes
These muffins can be enjoyed warm or with butter. Store in an airtight container for up to three days, or freeze for up to three months.
