Description

Ingredients

  • 250 g (2 cups) Orzo Pasta
  • 480 ml (2 cups) Vegetable or Chicken Broth
  • 30 ml (2 tablespoons) Olive Oil
  • 2 cloves Garlic, minced
  • 1 medium Onion, chopped
  • 50 g (½ cup) Parmesan Cheese, grated
  • 15 g (½ cup) Fresh Parsley, chopped

Instructions

  1. Sauté the aromatics in a skillet over medium heat with olive oil until the onion is tender and translucent.
  2. Add garlic and cook for another minute until fragrant.
  3. Cook the orzo by stirring it in the skillet for about 2 minutes until lightly toasted.
  4. Pour in broth, bring to a boil, then reduce heat to low, cover, and simmer until orzo is tender and liquid absorbed.
  5. Add cheese and parsley, mixing until creamy.
  6. Serve in bowls, garnishing with extra parsley and Parmesan if desired.

Notes

For a vegetable version, substitute broth with vegetable broth and add seasonal veggies during sautéing. For a gluten-free option, replace orzo with gluten-free pasta.
