Ingredients

  • 1 cup blackberries
  • 1/2 cup bourbon
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine bourbon, brown sugar, soy sauce, garlic, salt, and pepper in a bowl to make the glaze.
  3. Heat olive oil in an oven-safe pan over medium-high heat.
  4. Sear the salmon fillets for 2-3 minutes on each side until golden brown.
  5. Pour the bourbon glaze over the salmon and top with fresh blackberries.
  6. Transfer the pan to the oven and bake for 15-20 minutes or until the salmon is cooked through and flakes easily.
