  • 1 (15-ounce) can kidney beans, drained and rinsed

  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste

Instructions

  1. Sauté the aromatics: In a large pot, heat olive oil over medium heat. Add onion and red bell pepper, and cook for about 5 minutes until softened.
  2. Add garlic and meat: Stir in garlic and cook for 1 minute. Add ground beef or turkey and cook until browned, breaking it apart with a spoon.
  3. Stir in pumpkin and spices: Add pumpkin puree, fire-roasted tomatoes, BBQ sauce, chili powder, cumin, paprika, salt, and pepper. Mix well to combine.
  4. Add the beans: Fold in black beans and kidney beans. Reduce heat to low and simmer for 20–30 minutes, stirring occasionally.
  5. Taste and serve: Adjust seasoning as needed. Serve hot with your favorite toppings like cheese, sour cream, or tortilla chips.
