- 2 each Yellow bell peppers
- 2 tablespoons Olive oil
- 2 cloves Garlic
- 1 each Onion
- 2 tablespoons Balsamic vinegar
- 400 grams Passata
- 2 tablespoons Tomato paste
- 1 teaspoon Oregano
- 1 handful Basil
- to taste Salt
- to taste Pepper
Instructions
- Heat the olive oil in a spacious pan over medium heat until shimmering.
- Sauté the garlic, onions, and bell peppers for about 5 minutes.
- Combine the tomato paste, passata, balsamic vinegar, and a sprinkle of salt and pepper into the pan.
- Simmer the mixture on medium heat for 10 minutes until it thickens.
- Mix in the oregano and fresh basil, cooking for an additional 2 minutes.
