Description

Ingredients

  • 4 large egg whites, at room temperature
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cream of tartar
  • 1 cup chopped pecans, toasted

Instructions

  1. Preheat your oven to 225°F (110°C). Line baking sheets with parchment paper.
  2. In a clean, dry bowl, beat the egg whites with an electric mixer on medium speed until foamy. Add the cream of tartar and continue beating until soft peaks form.
  3. Gradually add the granulated sugar, one tablespoon at a time, beating on high speed until stiff, glossy peaks form and the sugar is completely dissolved. Stir in the vanilla extract.
  4. Gently fold in the toasted chopped pecans.
  5. Drop spoonfuls of the meringue mixture onto the prepared baking sheets.
  6. Bake for 60-75 minutes, or until the meringues are dry to the touch and lift easily from the parchment paper.
  7. Turn off the oven and let the meringues cool completely in the oven with the door slightly ajar.
  8. Store the cooled Pecan Meringue Cookies in an airtight container at room temperature.
