Description

A fun and festive poke cake perfect for summer gatherings and holiday celebrations.


Ingredients

Scale
  • 1 box of white cake mix
  • 3 large eggs
  • 1 cup water
  • 1/2 cup vegetable oil
  • 1 package of instant vanilla pudding mix
  • 2 cups milk
  • Red gel food coloring
  • Blue gel food coloring
  • 1 tub of whipped topping
  • Fresh strawberries (for decoration)
  • Fresh blueberries (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9×13 inch baking dish.
  2. Prepare the cake mix according to package instructions, adding the eggs, water, and oil.
  3. Bake the cake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  4. Allow the cake to cool for 10 minutes, then poke holes in the top with a fork.
  5. Whisk together the instant pudding mix and milk until thickened.
  6. Divide the pudding mixture in half; dye one half with red food coloring and the other half with blue.
  7. Pour the red pudding into the holes on one side of the cake and blue on the other side.
  8. Refrigerate the cake for at least 2 hours to allow the pudding to set.
  9. Top with whipped topping and decorate with fresh strawberries and blueberries.
  10. Serve and enjoy!

Notes

Make sure to poke enough holes in the cake for the pudding to soak in well. Adjust gel food coloring for desired shades.
