Description
Tender, juicy chicken glazed with a sweet and spicy hot honey sauce, served with a fresh corn salad.
Ingredients

- 4 boneless, skinless chicken thighs
- 120 ml (½ cup) hot honey
- 30 ml (2 tablespoons) olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 ears of fresh corn, kernels removed
- 1 red bell pepper, diced
- Juice of 1 lime
- Fresh cilantro, for garnish
Instructions
- Combine hot honey and olive oil in a mixing bowl. Mix well and add salt and pepper to taste. Pour over chicken and marinate for at least 1 hour.
- Remove kernels from corn and combine with red bell pepper and lime juice in a bowl. Toss and season with salt and pepper.
- Preheat the grill to medium-high heat, ensuring grates are clean and oiled.
- Grill the chicken for about 5–7 minutes per side or until cooked through and nicely charred, brushing with glaze during the last few minutes.
- Optionally, grill the corn on the cob for added flavor, about 10 minutes, and slice kernels for the salad.
- Remove chicken from grill and let rest for 5 minutes. Serve with corn salad and garnish with cilantro.
Notes
Marinate chicken overnight for maximum flavor. Adjust spice level in hot honey to your liking.
