A quick and elegant garlic butter salmon recipe, ready in under 25 minutes with a crispy exterior and tender center.

- 680 g salmon fillets (4 × 170 g / 6 oz), skin-on
- 1 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 56 g (4 tbsp / 1/4 cup) unsalted butter
- 3 cloves garlic, minced (9–12 g)
- 2 tbsp fresh lemon juice (30 ml)
- 2 tbsp fresh parsley, finely chopped (6 g)
- 1 tbsp (15 ml) olive oil
- Optional: 1 tsp Dijon mustard (5 g)
- Optional: 1/4 tsp red pepper flakes
Instructions
- Dry and season the fillets by patting them dry with paper towels, then seasoning both sides with salt and pepper. Let rest for 5 minutes.
- Heat the pan and oil over medium-high heat, adding olive oil and allowing it to shimmer for about 2 minutes.
- Sear the salmon fillets skin-side down for 4–5 minutes until the skin is golden.
- Flip the fillets and cook for 1–4 minutes more, depending on desired doneness.
- Make the garlic butter sauce by adding butter and minced garlic to the pan, sautéing until fragrant, and then stirring in lemon juice and parsley.
Notes
Use room-temperature fillets and avoid overcrowding the pan for best results. Make the garlic-herb butter ahead of time to save on preparation.
