Description

A delightful twist on the classic Reuben sandwich, these bite-sized Crispy Reuben Balls combine corned beef, sauerkraut, and Swiss cheese, making them perfect for parties or game-day appetizers.

Ingredients

Scale
  • 2 cups chopped corned beef
  • 1 cup sauerkraut
  • 1 cup Swiss cheese, shredded
  • 1 cup breadcrumbs
  • 2 Eggs, beaten
  • 2 tbsp mustard
  • Salt, to taste
  • Pepper, to taste
  • Oil for frying

Instructions

  1. Combine chopped corned beef, sauerkraut, Swiss cheese, mustard, salt, and pepper in a bowl.
  2. Form the mixture into small balls.
  3. Dip each ball in beaten eggs, then roll in breadcrumbs to coat.
  4. Heat oil in a deep skillet over medium heat.
  5. Fry the balls until golden and crispy, about 3-4 minutes.
  6. Remove from oil and drain on paper towels.
  7. Serve hot with additional mustard for dipping.

Notes

For a vegetarian version, replace corned beef with shredded cabbage or spinach and add more cheese. Store leftovers in an airtight container for 2-3 days. Reheat in the oven to maintain crispiness.
