Pasta with Spinach Sauce

Description

A vibrant and luscious pasta dish with a creamy spinach sauce, ideal for a quick weeknight dinner.


Ingredients

Scale
  • 250 g (8 oz) Pasta
  • 400 g (14 oz) Fresh Spinach
  • 3 cloves Garlic, minced
  • 3 tbsp (45 ml) Olive Oil
  • 50 g (½ cup) Grated Parmesan Cheese (optional)
  • Salt and Pepper, to taste

Instructions

  1. Cook the pasta by bringing a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, about 8-10 minutes. Reserve 1 cup of pasta water, then drain the pasta and set aside.
  2. Sauté the garlic in a skillet over medium heat with the olive oil for 1-2 minutes until fragrant, being careful not to burn it.
  3. Add the fresh spinach to the skillet, stirring until wilted for about 3-5 minutes.
  4. Blend the sautéed spinach and garlic mixture in a blender until smooth, adding a splash of reserved pasta water.
  5. Combine the blended spinach sauce with the pasta over low heat, mixing well and adding more pasta water as needed. Stir in the grated Parmesan cheese if using.
  6. Serve the pasta warm, garnished with extra Parmesan and a drizzle of olive oil if desired.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat gently in a skillet with a splash of water.
