Description
A vibrant and luscious pasta dish with a creamy spinach sauce, ideal for a quick weeknight dinner.
Ingredients

- 250 g (8 oz) Pasta
- 400 g (14 oz) Fresh Spinach
- 3 cloves Garlic, minced
- 3 tbsp (45 ml) Olive Oil
- 50 g (½ cup) Grated Parmesan Cheese (optional)
- Salt and Pepper, to taste
Instructions
- Cook the pasta by bringing a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, about 8-10 minutes. Reserve 1 cup of pasta water, then drain the pasta and set aside.
- Sauté the garlic in a skillet over medium heat with the olive oil for 1-2 minutes until fragrant, being careful not to burn it.
- Add the fresh spinach to the skillet, stirring until wilted for about 3-5 minutes.
- Blend the sautéed spinach and garlic mixture in a blender until smooth, adding a splash of reserved pasta water.
- Combine the blended spinach sauce with the pasta over low heat, mixing well and adding more pasta water as needed. Stir in the grated Parmesan cheese if using.
- Serve the pasta warm, garnished with extra Parmesan and a drizzle of olive oil if desired.
Notes
Store leftovers in an airtight container for up to 3 days. Reheat gently in a skillet with a splash of water.
