Ingredients

- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/2 cup milk
- 3 large eggs
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 cup rainbow sprinkles
- Frosting of choice (buttercream recommended)
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- Cream together softened butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- Combine flour and baking powder in a separate bowl. Gradually add the dry ingredients to the wet mixture, alternating with milk.
- Fold in the rainbow sprinkles gently.
- Fill the cupcake liners until about 2/3 full.
- Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool completely before frosting.
- Frost as desired with your favorite frosting and add more sprinkles on top for decoration.
Notes
Store cupcakes in an airtight container at room temperature. Best enjoyed within 2-3 days. Freeze without frosting for longer storage.
