Description

Delicious and nutritious cookies made with Greek yogurt and chia seeds, perfect for a healthy snack.


Ingredients

Scale
  • 200 g (1 ½ cups) all-purpose flour
  • 125 g (½ cup) Greek yogurt
  • 50 g (¼ cup) sugar
  • 60 ml (¼ cup) vegetable oil
  • 1 large egg
  • 30 g (¼ cup) chia seeds
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a bowl, whisk together flour, chia seeds, and baking powder. Set aside.
  3. In a separate bowl, mix Greek yogurt, sugar, vegetable oil, egg, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients. Do not overmix.
  5. Using a cookie scoop, drop heaping tablespoons of dough onto a lined baking sheet.
  6. Bake in the preheated oven for 10–12 minutes until golden brown. Let cool on the baking sheet.

Notes

For thicker cookies, chill the dough before baking. They can also be made ahead and kept refrigerated.
