A delightful dessert that combines the rich creaminess of cheesecake with the sweet flavor of Baileys Irish Cream.

- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup sugar
- 4 (8-ounce) packages cream cheese, softened
- 1 cup Baileys Irish Cream
- 4 large eggs
- 1 cup sour cream
- 1 cup heavy cream
- 1 cup dark chocolate, melted
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 325°F (163°C). Grease and line the bottom of a 9-inch springform pan.
- Mix graham cracker crumbs and melted butter, then press into the bottom of the prepared pan.
- Beat the cream cheese in a large mixing bowl until smooth. Gradually add sugar and continue to beat until fluffy.
- Add Baileys and eggs, one at a time, mixing well after each addition.
- Stir in sour cream and heavy cream until well combined.
- Pour the cheesecake batter over the crust in the springform pan.
- Bake in the preheated oven for about 60 minutes or until the center is set.
- Remove from the oven and let it cool in the pan before transferring to the refrigerator to chill for at least 240 minutes or overnight.
- Top with melted dark chocolate and whipped cream if desired.
- Slice and serve for a decadent dessert.
Notes
Serve chilled for the best texture and flavor. A dollop of whipped cream or a sprinkle of cocoa powder can enhance presentation.
