Description

Zucchini Pizza Casserole delivers comforting, cheesy flavors without the carbs of traditional pizza, perfect for satisfying cravings.


Ingredients

  • 4 cups shredded zucchini
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 2 cups pizza sauce
  • 1 green bell pepper chopped
  • 1/2 cup sliced mushrooms
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the shredded zucchini and salt in a large bowl. Let it sit for 10 minutes.
  3. Squeeze the zucchini to remove as much moisture as possible.
  4. Mix the drained zucchini with the eggs, Parmesan cheese, and half of the mozzarella cheese.
  5. Grease a 9×13-inch baking dish. Press the zucchini mixture evenly into the bottom.
  6. Bake the crust for 20 minutes, or until it’s set and lightly browned.
  7. Brown the ground beef with the chopped onion in a skillet over medium heat.
  8. Stir in the pizza sauce, green bell pepper, mushrooms, oregano, garlic powder, and black pepper.
  9. Spread the beef mixture over the zucchini crust.
  10. Sprinkle the remaining mozzarella cheese and all of the cheddar cheese over the top.
  11. Return the casserole to the oven and bake for another 20 minutes.
  12. Cool slightly before slicing and serving.
