- 2 cups all-purpose flour
- 1 teaspoon baking soda

- ½ cup softened unsalted butter
- ½ cup granulated sugar
- ½ cup packed brown sugar
- 1 large egg
- 1 teaspoon peppermint extract
- 1 cup white chocolate chips
- ½ cup crushed peppermint candies
Instructions
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper to prevent sticking.
- In a medium bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, and a pinch of salt. Set aside.
- In a large mixing bowl, cream together ½ cup of softened unsalted butter, ½ cup of granulated sugar, and ½ cup of packed brown sugar until light and fluffy.
- Beat in 1 large egg and 1 teaspoon of peppermint extract until well combined.
- Gradually add the dry mixture to the wet ingredients, stirring until just combined. Be careful not to overmix!
- Gently fold in 1 cup of white chocolate chips and, if you like, ½ cup of crushed peppermint candies for added crunch and flavor.
- Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges are just golden. The centers may look slightly underbaked, but they will firm up as they cool.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
