Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • a pinch of salt
  • ½ cup softened unsalted butter
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 1 large egg
  • 1 teaspoon peppermint extract
  • 1 cup white chocolate chips
  • ½ cup crushed peppermint candies

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper to prevent sticking.
  3. In a medium bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, and a pinch of salt. Set aside.
  4. In a large mixing bowl, cream together ½ cup of softened unsalted butter, ½ cup of granulated sugar, and ½ cup of packed brown sugar until light and fluffy.
  5. Beat in 1 large egg and 1 teaspoon of peppermint extract until well combined.
  6. Gradually add the dry mixture to the wet ingredients, stirring until just combined. Be careful not to overmix!
  7. Gently fold in 1 cup of white chocolate chips and, if you like, ½ cup of crushed peppermint candies for added crunch and flavor.
  8. Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake in the preheated oven for 10-12 minutes, or until the edges are just golden. The centers may look slightly underbaked, but they will firm up as they cool.
  10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
