- 4 chicken thighs (bone-in, skin-on)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup sun-dried tomatoes (packed in oil, drained and chopped)
- 2 cups fresh spinach, washed and dried
- 1 cup chicken broth
- ½ cup heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish (optional)
- Grated Parmesan cheese for serving (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large oven-safe skillet, heat olive oil over medium-high heat. Season the chicken thighs with salt and pepper. Place them skin-side down in the skillet and sear for about 5-7 minutes until golden brown. Flip and sear the other side for an additional 5 minutes.
- Add the minced garlic to the skillet. Sauté for about 1 minute, until fragrant.
- Stir in the chopped sun-dried tomatoes and cook for another 2-3 minutes, allowing the flavors to meld.
- Add the fresh spinach to the skillet, stirring until it wilts down.
- Carefully pour the chicken broth into the skillet, scraping up any browned bits from the bottom.
- Reduce the heat to low and stir in the heavy cream and Italian seasoning. Mix well to combine.
- Transfer the skillet to the preheated oven. Bake for 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove from the oven. Garnish with fresh basil and serve with grated Parmesan cheese if desired.

- Let the chicken rest for a few minutes before serving for better flavor.
