Description

Tuscan Garlic Chicken Thighs With Spinach and Sun-Dried Tomatoes is a flavorful dish that combines tender chicken with rich garlic, spinach, and sun-dried tomatoes.


Ingredients

  • 4 chicken thighs (bone-in, skin-on)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup sun-dried tomatoes (packed in oil, drained and chopped)
  • 2 cups fresh spinach, washed and dried
  • 1 cup chicken broth
  • ½ cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat olive oil over medium-high heat. Season the chicken thighs with salt and pepper. Place them skin-side down in the skillet and sear for about 5-7 minutes until golden brown. Flip and sear the other side for an additional 5 minutes.
  3. Add the minced garlic to the skillet. Sauté for about 1 minute, until fragrant.
  4. Stir in the chopped sun-dried tomatoes and cook for another 2-3 minutes, allowing the flavors to meld.
  5. Add the fresh spinach to the skillet, stirring until it wilts down.
  6. Carefully pour the chicken broth into the skillet, scraping up any browned bits from the bottom.
  7. Reduce the heat to low and stir in the heavy cream and Italian seasoning. Mix well to combine.
  8. Transfer the skillet to the preheated oven. Bake for 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  9. Remove from the oven. Garnish with fresh basil and serve with grated Parmesan cheese if desired.
