Instructions
- In a medium-sized mixing bowl, combine the softened mascarpone cheese, powdered sugar, vanilla extract, and espresso powder. Using a hand mixer or stand mixer, beat the mixture on medium speed until smooth, creamy, and slightly fluffy. The espresso powder should be fully dissolved and well integrated.
- Gently fold in the crushed ladyfingers using a silicone spatula or wooden spoon. Stir until the crumbs are fully incorporated, creating a thick and pliable dough-like consistency. If the mixture is too soft to shape, refrigerate it for 15-20 minutes to firm it up.
- Once the mixture is firm enough to handle, use a cookie scoop or spoon to portion out about 1 tablespoon of the mixture. Roll it between your palms to form smooth, even balls. Place each formed truffle on a parchment-lined tray. Repeat until all the mixture is used.
- For an extra decadent touch, melt the dark chocolate in a microwave-safe bowl in 20-second intervals, stirring in between until fully melted. Dip each chilled truffle halfway or fully into the chocolate, letting the excess drip off. Return them to the parchment-lined tray.
- Using a fine mesh sieve, generously dust the tops of each truffle with unsweetened cocoa powder.
- Chill the Tiramisu Truffles in the refrigerator for at least 30 minutes to allow them to set before serving.
