A quick and flavorful stir-fry featuring tender chicken, bold spices, and fresh Thai basil, ready in just 25 minutes.
Ingredients

- 500 g (1.1 lb) boneless, skinless chicken thighs
- 30 ml (2 tbsp) vegetable oil
- 6 cloves garlic, minced
- 3–6 fresh red Thai chiles, sliced thin
- 100 g (3.5 oz) long green beans, cut into 2–3 cm pieces (optional)
- 30 ml (2 tbsp) soy sauce
- 15 ml (1 tbsp) fish sauce
- 15 ml (1 tbsp) oyster sauce
- 10 g (2 tsp) light brown sugar
- 15 ml (1 tbsp) Shaoxing wine or water (optional)
- 40 g (about 2 packed cups) fresh Thai basil leaves
- lime wedges, to serve (optional)
- jasmine rice, for serving
Instructions
- Cut and season the chicken: Slice chicken thighs into strips and toss with salt, pepper, and soy sauce.
- Mix the sauce: Combine soy sauce, fish sauce, oyster sauce, sugar, and Shaoxing wine or water in a bowl.
- Heat the pan and infuse the oil: Heat a large skillet, add oil, garlic, and chiles, and sauté until aromatic.
- Cook the chicken: Add chicken, cook undisturbed to develop color, then stir-fry until cooked through.
- Add the sauce and finish: Stir in the sauce and fresh basil, cook until wilted, then serve over rice.
Notes
Use high heat to ensure the chicken doesn’t steam and remains juicy. Serve with lime for added brightness.
