- 3 medium sweet potatoes, peeled, 1-inch diced
- 1 lb green beans, trimmed
- 3 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- Salt & freshly ground pepper to taste
- 1 tbsp freshly squeezed lemon juice
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper. In a bowl, toss diced sweet potatoes with 2 tbsp olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Spread on baking sheet in a single layer.
- Roast sweet potatoes for 15 minutes.
- While sweet potatoes roast, toss trimmed green beans with 1 tbsp olive oil, salt, and pepper. After 15 minutes, remove tray. Add green beans to the tray and toss gently with sweet potatoes. Spread evenly.
- Return to oven and roast for another 15-20 minutes, or until sweet potatoes are tender and green beans are tender-crisp.
- Remove from oven, drizzle with lemon juice, and sprinkle with Parmesan cheese (if desired). Serve warm.
