Description

A delightful tray bake featuring naturally sweet caramelized sweet potatoes and vibrant, slightly crisp green beans. This recipe offers a harmonious blend of savory and subtly sweet notes, perfect as a side dish or a light, wholesome main course, with minimal effort and easy cleanup.


Ingredients

  • 3 medium sweet potatoes, peeled, 1-inch diced
  • 1 lb green beans, trimmed
  • 3 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt & freshly ground pepper to taste
  • 1 tbsp freshly squeezed lemon juice
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper. In a bowl, toss diced sweet potatoes with 2 tbsp olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Spread on baking sheet in a single layer.
  2. Roast sweet potatoes for 15 minutes.
  3. While sweet potatoes roast, toss trimmed green beans with 1 tbsp olive oil, salt, and pepper. After 15 minutes, remove tray. Add green beans to the tray and toss gently with sweet potatoes. Spread evenly.
  4. Return to oven and roast for another 15-20 minutes, or until sweet potatoes are tender and green beans are tender-crisp.
  5. Remove from oven, drizzle with lemon juice, and sprinkle with Parmesan cheese (if desired). Serve warm.
