- 1 cup mashed and cooked sweet potato
- 4 cups all-purpose flour
- 1 cup warm milk
- 1/4 cup melted unsalted butter
- 1/3 cup sugar
- 1 teaspoon salt
- 1 packet (2 1/4 teaspoons) active dry yeast
- 2 large eggs
Instructions
- Prepare sweet potato: Cook and mash until smooth. Set aside.
- Activate yeast: Mix warm milk with yeast and sugar. Let it sit for 5 minutes until bubbly.
- Combine ingredients: In a bowl, mix mashed sweet potato, melted butter, eggs, salt, and the yeast mixture. Stir well.
- Mix dough: Gradually add flour to the wet ingredients to form a sticky dough.
- Knead: On a floured surface, knead the dough for about 8 minutes until it is smooth.
- First rise: Place the dough in a greased bowl, cover it, and let it rise in a warm place for 1 to 2 hours, or until doubled in size.
- Shape rolls: Punch down the risen dough, divide it into 12-15 equal portions, and shape each portion into a roll.
- Second rise: Place the shaped rolls on a baking sheet lined with parchment paper. Cover them and let them rise for another 30 minutes.
- Preheat oven: Set your oven to 375°F (190°C).
- Bake: Bake the sweet potato dinner rolls for 20-25 minutes, or until they are golden brown.
Notes
- For faster cooking, peel and cube the sweet potato before boiling or baking.
- It’s normal for the dough to be slightly sticky; resist adding too much extra flour.
- Ovens vary, so check the rolls at 20 minutes.
- For extra flavor, brush the tops with melted butter immediately after they come out of the oven.
