  • 4 cups all-purpose flour
  • 1 cup warm milk
  • 1/4 cup melted unsalted butter
  • 1/3 cup sugar
  • 1 teaspoon salt
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 2 large eggs

Instructions

  1. Prepare sweet potato: Cook and mash until smooth. Set aside.
  2. Activate yeast: Mix warm milk with yeast and sugar. Let it sit for 5 minutes until bubbly.
  3. Combine ingredients: In a bowl, mix mashed sweet potato, melted butter, eggs, salt, and the yeast mixture. Stir well.
  4. Mix dough: Gradually add flour to the wet ingredients to form a sticky dough.
  5. Knead: On a floured surface, knead the dough for about 8 minutes until it is smooth.
  6. First rise: Place the dough in a greased bowl, cover it, and let it rise in a warm place for 1 to 2 hours, or until doubled in size.
  7. Shape rolls: Punch down the risen dough, divide it into 12-15 equal portions, and shape each portion into a roll.
  8. Second rise: Place the shaped rolls on a baking sheet lined with parchment paper. Cover them and let them rise for another 30 minutes.
  9. Preheat oven: Set your oven to 375°F (190°C).
  10. Bake: Bake the sweet potato dinner rolls for 20-25 minutes, or until they are golden brown.
