Instructions

  1. Scald the Milk: Heat the milk gently in a saucepan until small bubbles form around the edges; let it cool slightly until it’s warm, not hot.
  2. Activate Yeast: In a bowl, dissolve sugar in warm water, sprinkle yeast on top, and stir gently. Allow it to sit for about 5-10 minutes until frothy.
  3. Prepare Dough: In a mixing bowl, combine softened butter, remaining sugar, egg, yeast mixture, and cooled milk. Gradually add flour mixed with salt and cardamom until smooth.
  4. Knead the Dough: Gently knead the dough on a floured surface for about 5 minutes until elastic. Place in a greased bowl, cover, and let rise until doubled in size (1–1.5 hours).
  5. Make Filling: In a bowl, blend almond paste, brown sugar, and softened butter until smooth.
  6. Shape the Dough: Roll out the risen dough into a rectangle. Spread the almond filling over the dough, then roll it up tightly to form a log. Seal the edges and connect to form a circle.
  7. Cut and Shape: Using scissors, make snips along the outer edge of the ring and gently turn the pieces to create a braided look. Allow it to rise again for 1 hour.
