Savory Surf and Turf Kebabs with Zesty Chimichurri Sauce


Ingredients

Scale
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 3 cloves garlic
  • 1 medium minced shallot
  • 1/2 cup minced fresh parsley
  • 1/4 cup chopped fresh basil
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh oregano
  • 1/4 cup chopped cilantro
  • 1 medium finely chopped jalapeno
  • 1 teaspoon sea salt
  • 1/2 teaspoon cayenne pepper
  • 1 pound sirloin steak
  • 1 pound jumbo shrimp
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Combine all chimichurri sauce ingredients in a bowl and stir well. Allow it to sit at room temperature for two hours.
  2. If using wooden skewers, soak them in water for 1 hour.
  3. Fire up your grill to medium-high heat, around 425°F.
  4. Cut the sirloin steak into 1-inch cubes. Thread the steak and shrimp alternately onto the skewers.
  5. Lightly brush olive oil over the skewers. Sprinkle salt and pepper onto both sides.
  6. Place the skewers on the grill and cook for 8-10 minutes, turning every four minutes.
  7. Remove the kabobs from the grill and drizzle with chimichurri sauce. Serve immediately.
