- 1/2 lb. Rigatoni
- 1/2 lb. Ground Italian Sausage
- 1 cup Red Onion, chopped
- 3 Garlic Cloves, minced
- 1/3 cup Tomato Paste
- 1 cup Heavy Cream
- 1/2 cup Parmesan Cheese, grated
- 1–2 tsp Red Pepper Flakes
- 1/2 tsp Salt
- 1 tbsp Butter
- 1 tbsp Olive Oil
- 2 tbsp Fresh Parsley, chopped
Instructions
- Heat a large skillet over medium heat and cook the ground Italian sausage until browned. Transfer to a paper towel-lined plate to drain excess grease. Wipe down the skillet.
- Bring a large pot of salted water to a boil. Add rigatoni and cook according to package instructions until al dente. Drain and set aside.
- In the same skillet, add butter and olive oil over medium-low heat. Add chopped red onions and cook until soft, about 5 minutes. Add minced garlic and cook for another minute.
- Stir in tomato paste, salt, and parsley. Whisk in heavy cream until smooth. Stir in Parmesan cheese and red pepper flakes.
- Return cooked sausage to the skillet and add drained rigatoni. Stir to coat the pasta with the sauce.
- Garnish with fresh parsley and Parmesan cheese if desired. Serve immediately.
