Description

Spicy Sausage Rigatoni is a comforting Italian-American pasta dish featuring rigatoni pasta tossed in a rich and creamy tomato sauce with spicy ground Italian sausage, fragrant sautéed onions, garlic, and a hint of red pepper flakes for heat.


Ingredients

  • 1/2 lb. Rigatoni
  • 1/2 lb. Ground Italian Sausage
  • 1 cup Red Onion, chopped
  • 3 Garlic Cloves, minced
  • 1/3 cup Tomato Paste
  • 1 cup Heavy Cream
  • 1/2 cup Parmesan Cheese, grated
  • 12 tsp Red Pepper Flakes
  • 1/2 tsp Salt
  • 1 tbsp Butter
  • 1 tbsp Olive Oil
  • 2 tbsp Fresh Parsley, chopped

Instructions

  1. Heat a large skillet over medium heat and cook the ground Italian sausage until browned. Transfer to a paper towel-lined plate to drain excess grease. Wipe down the skillet.
  2. Bring a large pot of salted water to a boil. Add rigatoni and cook according to package instructions until al dente. Drain and set aside.
  3. In the same skillet, add butter and olive oil over medium-low heat. Add chopped red onions and cook until soft, about 5 minutes. Add minced garlic and cook for another minute.
  4. Stir in tomato paste, salt, and parsley. Whisk in heavy cream until smooth. Stir in Parmesan cheese and red pepper flakes.
  5. Return cooked sausage to the skillet and add drained rigatoni. Stir to coat the pasta with the sauce.
  6. Garnish with fresh parsley and Parmesan cheese if desired. Serve immediately.
