- 1 fresh pineapple (about 4 cups chopped, 500g)
- 1 cup golden raisins (150g)
- 1 large onion, finely chopped
- 1 red chili pepper, deseeded and minced (optional)
- 1 cup brown sugar (200g)
- 1 cup apple cider vinegar (240ml)
- 1 tsp ground ginger
- 1 tsp mustard seeds
- ½ tsp cinnamon
- ½ tsp ground cloves
- ½ tsp turmeric
- 1 tsp salt
Instructions
- Peel, core, and chop the pineapple into small chunks.
- In a large saucepan, combine the chopped pineapple, raisins, chopped onion, minced chili pepper (if using), brown sugar, and apple cider vinegar. Stir well to dissolve the sugar.
- Add the ground ginger, mustard seeds, cinnamon, ground cloves, turmeric, and salt to the saucepan. Mix thoroughly to ensure the spices are evenly distributed throughout the mixture.
- Bring the chutney mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 45–60 minutes. Stir occasionally to prevent sticking. Continue simmering until the chutney thickens to a jam-like consistency.
- Taste the chutney and adjust seasonings as needed. Add more brown sugar if you prefer it sweeter, or a splash more apple cider vinegar for extra tanginess.
- Carefully transfer the hot chutney into sterilized glass jars. Seal the jars tightly. Allow the jars to cool completely before refrigerating. For long-term storage, process the filled jars in a boiling water bath canner according to standard canning procedures.
