- 3 to 4 pounds sirloin tip roast
- 4 large carrots, cut into chunks
- 4 medium potatoes, cut into quarters
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Chop the carrots, potatoes, onion, and mince the garlic.
- Rub the sirloin tip roast with olive oil, salt, pepper, thyme, and rosemary.
- In a skillet over medium-high heat, sear the roast on all sides until browned (about 3-4 minutes per side).
- Place the seared roast in the slow cooker.
- Surround the roast with the chopped carrots, potatoes, and onion. Sprinkle the minced garlic on top.
- In a bowl, combine the beef broth and Worcestershire sauce. Pour this mixture over the roast and vegetables.
- Cover the slow cooker and set it to low for 8 hours or high for 4 hours.
- The roast should be fork-tender and the vegetables soft.
- Once cooked, let the roast rest for about 10 minutes before slicing.
- Slice the roast against the grain and serve it with the vegetables and broth.
