Description

Slow-Cooked Sirloin Tip Roast and Veggies is an incredible dish that combines tender meat with flavorful vegetables.


Ingredients

  • 3 to 4 pounds sirloin tip roast
  • 4 large carrots, cut into chunks
  • 4 medium potatoes, cut into quarters
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Chop the carrots, potatoes, onion, and mince the garlic.
  2. Rub the sirloin tip roast with olive oil, salt, pepper, thyme, and rosemary.
  3. In a skillet over medium-high heat, sear the roast on all sides until browned (about 3-4 minutes per side).
  4. Place the seared roast in the slow cooker.
  5. Surround the roast with the chopped carrots, potatoes, and onion. Sprinkle the minced garlic on top.
  6. In a bowl, combine the beef broth and Worcestershire sauce. Pour this mixture over the roast and vegetables.
  7. Cover the slow cooker and set it to low for 8 hours or high for 4 hours.
  8. The roast should be fork-tender and the vegetables soft.
  9. Once cooked, let the roast rest for about 10 minutes before slicing.
  10. Slice the roast against the grain and serve it with the vegetables and broth.
