Description

A decadent and rich chocolate cheesecake topped with a smooth dark chocolate ganache, perfect for chocolate lovers.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar
  • 24 oz cream cheese, softened
  • 1 cup dark chocolate, melted
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 8 oz heavy cream

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan.
  3. In a large bowl, beat the cream cheese and sugar until smooth.
  4. Add in melted chocolate, vanilla, and salt, mixing until fully combined.
  5. Add eggs one at a time, mixing well after each addition.
  6. Pour the mixture into the prepared crust and smooth the top.
  7. Bake for 45 minutes or until set. Let cool.
  8. In a saucepan, heat the heavy cream until just simmering. Pour over the dark chocolate, let sit for a few minutes, then stir until smooth.
  9. Spread the ganache over the cooled cheesecake and refrigerate for at least 4 hours before serving.

Notes

For best results, chill the cheesecake overnight. Use high-quality dark chocolate for deeper flavor.
