- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup sugar
- 24 oz cream cheese, softened
- 1 cup dark chocolate, melted
- 4 large eggs
- 1 tsp vanilla extract
- 1/4 tsp salt
- 8 oz heavy cream
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan.
- In a large bowl, beat the cream cheese and sugar until smooth.
- Add in melted chocolate, vanilla, and salt, mixing until fully combined.
- Add eggs one at a time, mixing well after each addition.
- Pour the mixture into the prepared crust and smooth the top.
- Bake for 45 minutes or until set. Let cool.
- In a saucepan, heat the heavy cream until just simmering. Pour over the dark chocolate, let sit for a few minutes, then stir until smooth.
- Spread the ganache over the cooled cheesecake and refrigerate for at least 4 hours before serving.
Notes
For best results, chill the cheesecake overnight. Use high-quality dark chocolate for deeper flavor.
