Description

A hearty and flavorful vegetable lasagna that’s perfect for a cozy dinner.


Ingredients

Scale
  • 12 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 2 cups spinach
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup grated Parmesan cheese
  • 3 cups marinara sauce
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions. Drain and set aside.
  3. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until softened.
  4. Add zucchini and bell pepper, cooking until tender, then stir in spinach until wilted.
  5. In a 9×13 inch baking dish, spread a layer of marinara sauce. Layer 4 noodles, half the ricotta, half the vegetable mixture, and a layer of mozzarella. Repeat.
  6. Top with remaining noodles, marinara sauce, mozzarella, and Parmesan cheese.
  7. Bake in the preheated oven for 45 minutes, until bubbly and golden.
  8. Let cool for 10 minutes before slicing and serving.

Notes

Feel free to add your favorite vegetables or use store-bought marinara for convenience.
