A hearty and flavorful vegetable lasagna that’s perfect for a cozy dinner.
Ingredients

- 12 lasagna noodles
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 zucchini, sliced
- 1 bell pepper, chopped
- 2 cups spinach
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup grated Parmesan cheese
- 3 cups marinara sauce
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until softened.
- Add zucchini and bell pepper, cooking until tender, then stir in spinach until wilted.
- In a 9×13 inch baking dish, spread a layer of marinara sauce. Layer 4 noodles, half the ricotta, half the vegetable mixture, and a layer of mozzarella. Repeat.
- Top with remaining noodles, marinara sauce, mozzarella, and Parmesan cheese.
- Bake in the preheated oven for 45 minutes, until bubbly and golden.
- Let cool for 10 minutes before slicing and serving.
Notes
Feel free to add your favorite vegetables or use store-bought marinara for convenience.
