Self Saucing Butterscotch Pudding is an incredible dessert that creates its own sauce while baking.

- 1 cup brown sugar
- ½ cup all-purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ½ cup milk
- ½ cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup hot water
- ½ cup butterscotch sauce (store-bought or homemade)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the brown sugar, flour, baking powder, and salt until well blended.
- In another bowl, combine the milk, melted butter, and vanilla extract. Mix well.
- Pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to over-mix.
- Pour the pudding mixture into a greased 8-inch baking dish or oven-safe bowl.
- Slowly pour the hot water over the pudding mixture. Do not stir; the water will create the sauce as it bakes.
- Drizzle the butterscotch sauce evenly over the top of the pudding mixture.
- Place in the preheated oven and bake for 30 minutes, or until the top is set and the sauce has formed underneath.
- Remove from the oven and let it cool for a few minutes before serving.

- This pudding is best served warm.
