  • 8 ounces Sliced mushrooms
  • 1 medium Shallot
  • 2 cloves Garlic
  • 1 cup Low sodium chicken broth
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Sherry vinegar
  • 1 cup Heavy cream
  • 1 teaspoon Fresh thyme
  • 4 servings Mashed potatoes or rice

Instructions

  1. Prepare Chicken: Split each chicken breast into cutlets and gently pound to an even thickness of about ½-inch. Season both sides with ½ teaspoon salt and pepper to enhance flavors.
  2. Dredge Chicken: Lightly coat each piece of chicken in flour, shaking off any excess. Arrange them on a large plate, ready for the skillet.
  3. Sear Chicken: Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil. Once hot, add 2 pieces of chicken and sear until golden brown, about 2-3 minutes per side, reaching 160°F. Transfer to a plate and tent with foil.
  4. Repeat Searing: Add the remaining tablespoon of olive oil to the skillet and sear the other chicken pieces, transferring them to the plate afterward.
  5. Sauté Mushrooms: Lower the skillet heat to medium, and melt the butter. Add mushrooms, shallot, garlic, and ¼ teaspoon salt. Cook until mushrooms soften and start to brown, around 10 minutes. Remove the mushrooms from the skillet and set aside.
  6. Make the Sauce: Pour chicken broth into the skillet, scraping up any browned bits. Whisk in Dijon mustard and sherry vinegar, letting it simmer until reduced by half, approximately 3 minutes.
  7. Add Cream: While whisking, slowly pour in heavy cream. Return the chicken and mushrooms to the pan, warming everything through for a minute or two, ensuring the chicken is well-coated in the creamy sauce.
