- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 cup all-purpose flour (for dredging)
- 4 tablespoons olive oil
- 8 ounces cremini or button mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup Marsala wine
- 1 cup chicken broth
- 2 tablespoons unsalted butter
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with salt and pepper on both sides. Dredge each breast in flour, shaking off any excess.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Add the chicken breasts to the skillet and cook for 4-5 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining 2 tablespoons of olive oil. Add the sliced mushrooms and sauté for about 5 minutes until they are browned and tender.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Pour in the Marsala wine, scraping the bottom of the skillet to release any browned bits. Allow the wine to reduce by half, which should take about 3-4 minutes.
- Add the chicken broth and return the chicken to the skillet. Simmer for another 5 minutes. Stir in the butter until melted, creating a rich sauce.
