Description

Savory Bread Pudding with Herbs & Cheese is an incredible dish that combines the flavors of cheese and fresh herbs in a creamy bread base.

Ingredients

Scale
  • 8 cups day-old bread, cubed
  • 2 cups whole milk
  • 1 cup heavy cream
  • 4 large eggs
  • 1 cup shredded cheese (such as cheddar, Gruyère, or a mix)
  • 1 cup finely chopped fresh herbs (such as parsley, thyme, or basil)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil or butter (for sautéing)

Instructions

  1. Set your oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter or cooking spray.
  2. Sauté the onion and garlic: In a skillet, heat the olive oil or butter over medium heat. Add the diced onion and cook until translucent, about 4-5 minutes. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant. Remove from heat and let cool slightly.
  3. Prepare the bread: In a large bowl, combine the cubed bread and sautéed onion and garlic mixture. Toss to ensure the bread is evenly coated.
  4. Mix the wet ingredients: In another bowl, whisk together the eggs, whole milk, heavy cream, salt, black pepper, and red pepper flakes (if using) until well combined.
  5. Combine the mixtures: Pour the egg mixture over the bread cubes and gently fold in the shredded cheese and fresh herbs. Ensure all the bread pieces are soaked in the egg mixture.
  6. Transfer to baking dish: Spoon the mixture into the prepared baking dish, making sure to spread it evenly.
  7. Bake: Place the dish in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and the center is set.
  8. Cool and serve: Once baked, remove from the oven and let it cool for about 10-15 minutes before serving.

Notes

  • Consider incorporating cooked bacon, sausage, or diced ham for a heartier dish.
