Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up into smaller pieces as it cooks. This should take about 5-7 minutes.
  2. Add the chopped onion and minced garlic to the pot. Sauté for 3-4 minutes until the onion becomes translucent and fragrant.
  3. Stir in the diced potatoes and cook for an additional 2 minutes, allowing them to absorb some of the flavors.
  4. Add the chicken broth to the pot. Bring the mixture to a boil, then reduce the heat to simmer. Cover the pot and let it cook for about 15-20 minutes, or until the potatoes are tender.
  5. Once the potatoes are cooked, stir in the heavy cream and dried thyme. Allow the soup to simmer for another 5 minutes to blend the flavors.
  6. Add the chopped kale or spinach, and stir until wilted. Season with salt and pepper to taste.
