- 1 pound Italian sausage (mild or spicy, according to preference)
- 4 medium-sized potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups kale or spinach, chopped
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Olive oil for cooking
- Optional: grated Parmesan cheese for topping
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up into smaller pieces as it cooks. This should take about 5-7 minutes.
- Add the chopped onion and minced garlic to the pot. Sauté for 3-4 minutes until the onion becomes translucent and fragrant.
- Stir in the diced potatoes and cook for an additional 2 minutes, allowing them to absorb some of the flavors.
- Add the chicken broth to the pot. Bring the mixture to a boil, then reduce the heat to simmer. Cover the pot and let it cook for about 15-20 minutes, or until the potatoes are tender.
- Once the potatoes are cooked, stir in the heavy cream and dried thyme. Allow the soup to simmer for another 5 minutes to blend the flavors.
- Add the chopped kale or spinach, and stir until wilted. Season with salt and pepper to taste.
- Ladle the soup into bowls and top with grated Parmesan cheese if desired.
