- 1/2 cup brown sugar
- 4 tbsp butter
- 3 tbsp heavy cream
- Pinch of salt
- Ritz crackers
- Melted chocolate (optional)
- Flaky sea salt (for topping)
Instructions
- Prep: Gather all ingredients and line a tray with parchment paper.
- Make the filling: Melt butter in a saucepan, stir in brown sugar until dissolved, add cream and stir for 2-3 minutes until glossy and slightly thick. Cool before use.
- Assemble: Pipe or spoon filling onto a single cracker, press another cracker on top to form a sandwich.
- Optional: Dip the tops in melted chocolate and sprinkle with sea salt.
- Set & Store: Allow cookies to chill to firm up before storing in an airtight container with parchment layers in between.
Notes
Use fresh crackers for the best texture and ensure caramel is warm but not too hot during assembly to avoid sogginess.
