Instructions
- In a mixing bowl, combine the softened salted butter and confectioners’ sugar. Blend until well incorporated, then add the egg yolk and rum, mixing until smooth.
- Gently sift the cake flour and baking powder into the butter mixture, folding together until combined.
- If the dough feels sticky, refrigerate for 20-30 minutes; otherwise, proceed to the next step.
- Roll the dough between two sheets of parchment paper to a 1/4-inch thickness. Chill for 2 hours or freeze for 1 hour.
- Preheat your oven to 340°F (170°C) and line baking sheets with parchment paper.
- Cut out circles using a cookie cutter from the chilled dough and place them on the prepared baking sheets.
- Brush the tops with egg wash and create a criss-cross pattern using a fork.
- Bake for 15-18 minutes until golden brown. Transfer to a wire rack to cool.
