  • 1 cup Cake flour (ensures light and crumbly texture)
  • 0.25 tsp Baking powder (helps achieve perfect crumb)
  • 1 Egg yolk (for brushing on top)

Instructions

  1. In a mixing bowl, combine the softened salted butter and confectioners’ sugar. Blend until well incorporated, then add the egg yolk and rum, mixing until smooth.
  2. Gently sift the cake flour and baking powder into the butter mixture, folding together until combined.
  3. If the dough feels sticky, refrigerate for 20-30 minutes; otherwise, proceed to the next step.
  4. Roll the dough between two sheets of parchment paper to a 1/4-inch thickness. Chill for 2 hours or freeze for 1 hour.
  5. Preheat your oven to 340°F (170°C) and line baking sheets with parchment paper.
  6. Cut out circles using a cookie cutter from the chilled dough and place them on the prepared baking sheets.
  7. Brush the tops with egg wash and create a criss-cross pattern using a fork.
  8. Bake for 15-18 minutes until golden brown. Transfer to a wire rack to cool.
