Decadent Refined-Sugar-Free Turtle Brownies You’ll Love


Ingredients

  • 1 can Black beans (Drained and rinsed)
  • 2 tablespoons Flaxseed meal (For egg substitute)
  • 5 tablespoons Water (To hydrate flaxseed meal)
  • 1/4 cup Coconut oil (Melted)
  • 1/2 cup Unsweetened cocoa powder
  • 1/4 teaspoon Sea salt (Sprinkle more on top)
  • 1 teaspoon Pure vanilla extract
  • 1/2 cup Coconut sugar
  • 1/4 cup Maple syrup
  • 1 teaspoon Baking powder
  • 1/2 cup Chopped raw pecans
  • 1/2 cup Unsweetened coconut
  • 1/2 cup Vegan chocolate chips
  • 1 cup Date caramel (For swirling)

Instructions

  1. Preheat your oven to 350°F (176°C) and lightly grease a standard size muffin pan.
  2. Prepare the flax eggs by combining 2 tablespoons of flaxseed meal with 5 tablespoons of water in a food processor. Let it rest for 5 minutes.
  3. Blend all remaining batter ingredients, except the mix-ins, for 1-2 minutes until smooth.
  4. Gently incorporate the chopped pecans, coconut, and chocolate chips into the batter.
  5. Fill the muffin tin with the batter and swirl in 1 teaspoon of date caramel into each brownie.
  6. Garnish with additional coconut, pecans, and chocolate chips.
  7. Bake for 25-30 minutes or until the tops are dry and edges pull away from the tin.
  8. Let the brownies cool for 20-30 minutes before removing them from the pan.
