Decadent Refined-Sugar-Free Turtle Brownies You’ll Love

- 1 can Black beans (Drained and rinsed)
- 2 tablespoons Flaxseed meal (For egg substitute)
- 5 tablespoons Water (To hydrate flaxseed meal)
- 1/4 cup Coconut oil (Melted)
- 1/2 cup Unsweetened cocoa powder
- 1/4 teaspoon Sea salt (Sprinkle more on top)
- 1 teaspoon Pure vanilla extract
- 1/2 cup Coconut sugar
- 1/4 cup Maple syrup
- 1 teaspoon Baking powder
- 1/2 cup Chopped raw pecans
- 1/2 cup Unsweetened coconut
- 1/2 cup Vegan chocolate chips
- 1 cup Date caramel (For swirling)
Instructions
- Preheat your oven to 350°F (176°C) and lightly grease a standard size muffin pan.
- Prepare the flax eggs by combining 2 tablespoons of flaxseed meal with 5 tablespoons of water in a food processor. Let it rest for 5 minutes.
- Blend all remaining batter ingredients, except the mix-ins, for 1-2 minutes until smooth.
- Gently incorporate the chopped pecans, coconut, and chocolate chips into the batter.
- Fill the muffin tin with the batter and swirl in 1 teaspoon of date caramel into each brownie.
- Garnish with additional coconut, pecans, and chocolate chips.
- Bake for 25-30 minutes or until the tops are dry and edges pull away from the tin.
- Let the brownies cool for 20-30 minutes before removing them from the pan.
