The Rebel Within Muffin offers a delightful cheesy egg surprise that’s perfect for breakfast or brunch.
Ingredients

- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 large eggs (for the batter and as surprise filling)
- 1 cup full-fat sour cream
- 4 tablespoons melted butter
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup shredded parmesan cheese
- 1/4 cup chives
Instructions
- Fill a bowl with warm water and gently place the eggs in it to warm them up.
- Bring a medium pot of water to a vigorous boil. Slowly lower the eggs into the boiling water and set a timer for 2 minutes and 45 seconds.
- While the eggs are boiling, make an ice bath by filling a bowl with ice and water.
- When the timer goes off, carefully remove the eggs from the pot and place them directly into the ice bath for a few minutes to cool.
- Once the eggs are cool enough to handle, gently peel them, starting from the wide end. Place the peeled eggs on a plate.
- Place the peeled eggs in the freezer while you prepare the muffin batter.
- Preheat your oven to 400°F (200°C) and grease a large muffin or popover pan generously.
- In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and baking soda until well combined.
- In a separate medium bowl, whisk together the sour cream, two large eggs, melted butter, and milk.
- Pour the wet mixture into the bowl of dry ingredients and mix gently until just combined.
- Fold in about 75% of the cheddar cheese, the parmesan cheese, and chives.
- Transfer the batter into a piping bag. Pipe a thin layer of batter into the bottom of each muffin cup.
- Carefully place a chilled soft-boiled egg in the center of each muffin cavity and pipe more batter around and on top of the egg.
- Sprinkle the remaining cheddar cheese on top of each muffin dome.
- Bake the muffins for 16 minutes, rotating the pan halfway through.
- Allow the muffins to cool in the pan for about 5 minutes.
- Loosen the muffins from the sides of the pan using a spatula and carefully remove them from the pan.
