Instructions

Add cold, cubed unsalted butter and pulse until the mixture resembles coarse crumbs. Add ice water one tablespoon at a time, pulsing until the dough just comes together.
  2. Chill the Dough: Turn the dough onto a clean surface, knead into a ball, flatten into a disc, wrap in plastic, and refrigerate for at least 1 hour.
  3. Roll and Cut the Cookies: On a lightly floured surface, roll the dough to about 1/8-inch thickness. Cut out 2-inch circles. For half the circles, cut a smaller hole from the center using a smaller cutter.
  4. Assemble with Raspberry Filling: Place solid dough circles on a parchment-lined baking sheet. Spoon about 1/2 teaspoon of raspberry jam into the center of each. Place a cut-out circle on top and press edges to seal.
  5. Bake to Perfection: Preheat oven to 350°F (175°C). Bake cookies for 12-15 minutes, until edges are lightly golden brown.
  6. Cool and Dust: Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Dust generously with powdered sugar.
