Description

A festive cake combining the delightful flavors of coffee, chocolate, and peppermint, perfect for holiday celebrations.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon peppermint extract
  • 1 cup boiling water
  • Peppermint frosting
  • Crushed peppermint candies for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, mix flour, sugar, cocoa, baking powder, and salt.
  4. Add milk, oil, eggs, vanilla, and peppermint extracts. Beat until smooth.
  5. Stir in boiling water until well combined.
  6. Pour batter evenly into prepared pans.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  9. Frost with peppermint frosting and sprinkle crushed peppermint on top.

Notes

For a stronger peppermint flavor, consider adding crushed candy canes to the frosting.
