Description

Ingredients

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • For the filling:
  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy cream or milk

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually blend the dry ingredients into the peanut butter mixture until just combined.
  6. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing about 2 inches apart.
  7. Bake for 10-12 minutes or until edges are lightly browned.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  9. To make the filling, beat together the softened butter and peanut butter until smooth.
  10. Gradually add powdered sugar, beating until combined.
  11. Mix in vanilla extract and enough heavy cream or milk to achieve a creamy, spreadable consistency.
  12. Once cookies are completely cool, spread a generous amount of filling on the bottom of one cookie and sandwich with another cookie.
  13. Repeat with remaining cookies and filling.
