- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 cup light corn syrup
- 1 teaspoon vanilla extract
- 2 cups semi-sweet chocolate chips
- 1 tablespoon coconut oil (optional, for smooth melting)
Instructions
- Grease a 9×13-inch baking dish with butter or cooking spray to prevent sticking. Set aside.
- In a medium saucepan over medium heat, combine the granulated sugar and light corn syrup. Stir continuously until the mixture comes to a gentle boil.
- Once boiling, remove the saucepan from heat. Stir in the creamy peanut butter and vanilla extract until completely smooth and combined.
- Pour the Rice Krispies cereal into the saucepan. Stir gently until the cereal is fully coated with the peanut butter mixture.
- Spoon the mixture into the prepared baking dish. Press it down firmly and evenly using a spatula or your hands (lightly greased).
- Allow the mixture to cool at room temperature for about 30 minutes.
- In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.
- Once the Rice Krispie treats have cooled, pour the melted chocolate over the top. Use a spatula to spread it evenly across the surface.
- Place the pan in the refrigerator for about 15 minutes to allow the chocolate to set.
