- 8 ounces pasta of choice
- 1 can diced tomatoes
- 1 cup chicken broth
- 1 cup shredded cheese
- 1 tablespoon chipotle in adobo sauce
- 1 onion, chopped

- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat.
- Add the diced chicken and cook until browned.
- Add onion and garlic, and sauté until soft.
- Stir in the diced tomatoes and chipotle sauce.
- Add the pasta and chicken broth; bring to a boil.
- Reduce heat and simmer until pasta is cooked.
- Stir in the cheese until melted and creamy.
- Season with salt and pepper.
- Serve hot.
