Ingredients

- 900 g (2 lb) ground beef (80/20)
- 1 medium yellow onion (150 g), diced
- 3 cloves garlic (9 g), minced
- 30 g (2 tbsp) tomato paste
- 120 ml (1/2 cup) beef broth
- 15 ml (1 tbsp) chili powder
- 5 ml (1 tsp) paprika
- 5 ml (1 tsp) cumin
- 2.5 ml (1/2 tsp) oregano
- 10 g (1 1/2 tsp) Diamond Crystal kosher salt
- 1/2 tsp black pepper
- 2.5 ml (1/2 tsp) sugar or brown sugar
- 15 ml (1 tbsp) lime juice
- 12 (6-inch) corn or flour tortillas
Instructions
- Prep the aromatics and spices: Dice onion and mince garlic. Whisk together chili powder, paprika, cumin, oregano, salt, and black pepper.
- Brown the beef: Heat skillet, add ground beef, and brown for 4-5 minutes.
- Cook the onion and garlic: Push beef aside, add onion, sauté for 3-4 minutes, then stir in garlic for 30-45 seconds.
- Toast the spices and add tomato paste: Add spice mixture and tomato paste, cook for 45-60 seconds.
- Deglaze and simmer: Pour in beef broth, cook uncovered for 3-4 minutes.
- Finish and rest: Stir in lime juice off heat and let the meat rest for 2 minutes.
