Old-Fashioned Pink Jelly Cakes are a nostalgic dessert featuring soft layers filled with fruit jelly and topped with creamy pink frosting.

  • For the Cake:
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • For the Jelly Filling:
  • 1/2 cup fruit jelly or jam (strawberry, raspberry, or cherry)
  • 1 tablespoon lemon juice
  • For the Pink Frosting:
  • 2 cups powdered sugar
  • 1/4 cup unsalted butter, softened
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • 12 tablespoons raspberry or strawberry puree (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside. In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time and stir in vanilla. Gradually add dry ingredients, alternating with milk. Mix until just combined.
  2. Divide the batter evenly between the prepared pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick comes out clean. Let cakes cool for 10 minutes in pans before transferring to a wire rack to cool completely.
  3. Mix fruit jelly with lemon juice. If the jelly is thick, warm it briefly in the microwave to make it easier to spread.
  4. Beat powdered sugar and butter until smooth. Add heavy cream, vanilla, and fruit puree if using, to achieve the desired pink color and consistency.
  5. Once cakes are cool, place one layer on a serving platter. Spread jelly filling evenly over it. Add the second layer and frost with pink frosting.
  6. Slice and serve. Enjoy!
