- For the Cake:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- For the Jelly Filling:
- 1/2 cup fruit jelly or jam (strawberry, raspberry, or cherry)
- 1 tablespoon lemon juice
- For the Pink Frosting:
- 2 cups powdered sugar
- 1/4 cup unsalted butter, softened
- 2 tablespoons heavy cream
- 1 teaspoon vanilla extract
- 1–2 tablespoons raspberry or strawberry puree (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside. In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time and stir in vanilla. Gradually add dry ingredients, alternating with milk. Mix until just combined.
- Divide the batter evenly between the prepared pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick comes out clean. Let cakes cool for 10 minutes in pans before transferring to a wire rack to cool completely.
- Mix fruit jelly with lemon juice. If the jelly is thick, warm it briefly in the microwave to make it easier to spread.
- Beat powdered sugar and butter until smooth. Add heavy cream, vanilla, and fruit puree if using, to achieve the desired pink color and consistency.
- Once cakes are cool, place one layer on a serving platter. Spread jelly filling evenly over it. Add the second layer and frost with pink frosting.
- Slice and serve. Enjoy!

- Store leftovers in an airtight container.
- Use your favorite fruit jelly for filling.
- Adjust the frosting color with more or less fruit puree.
