Description

A hearty and delicious vegetarian lasagna layered with fresh vegetables and cheese.


Ingredients

Scale
  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 2 cups spinach, fresh
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 2 cups marinara sauce
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions and set aside.
  3. In a skillet, heat olive oil and sauté zucchini and bell pepper until tender.
  4. In a bowl, mix ricotta cheese with salt, pepper, and Italian seasoning.
  5. Spread a layer of marinara sauce at the bottom of a baking dish.
  6. Layer 3 noodles, half of the ricotta mixture, half of the sautéed vegetables, and a layer of mozzarella.
  7. Repeat the layers, ending with noodles and marinara sauce on top.
  8. Sprinkle with remaining mozzarella and Parmesan cheese.
  9. Bake for 30-35 minutes until the cheese is bubbly and golden.
  10. Let it cool for a few minutes before serving.

Notes

For a spicier kick, add crushed red pepper flakes between the layers.
