Description
A hearty and delicious vegetarian lasagna layered with fresh vegetables and cheese.
Ingredients

- 9 lasagna noodles
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup Parmesan cheese, grated
- 2 cups spinach, fresh
- 1 zucchini, sliced
- 1 bell pepper, chopped
- 2 cups marinara sauce
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions and set aside.
- In a skillet, heat olive oil and sauté zucchini and bell pepper until tender.
- In a bowl, mix ricotta cheese with salt, pepper, and Italian seasoning.
- Spread a layer of marinara sauce at the bottom of a baking dish.
- Layer 3 noodles, half of the ricotta mixture, half of the sautéed vegetables, and a layer of mozzarella.
- Repeat the layers, ending with noodles and marinara sauce on top.
- Sprinkle with remaining mozzarella and Parmesan cheese.
- Bake for 30-35 minutes until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
For a spicier kick, add crushed red pepper flakes between the layers.
