Description

A delightful and hearty vegetable lasagna made with layers of fresh vegetables, creamy ricotta, and marinara sauce.


Ingredients

Scale
  • 9 lasagna noodles
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup chopped spinach
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions.
  3. In a baking dish, spread some marinara sauce on the bottom.
  4. Layer 3 lasagna noodles over the sauce.
  5. Spread half of the ricotta cheese, followed by half of the spinach, zucchini, and bell pepper.
  6. Sprinkle with Italian seasoning, salt, and pepper.
  7. Add a layer of marinara sauce and sprinkle with mozzarella.
  8. Repeat layers, finishing with noodles and marinara sauce on top.
  9. Cover with aluminum foil and bake for 30 minutes.
  10. Remove foil and bake for an additional 10 minutes until cheese is bubbly.
  11. Let it cool for 10 minutes before slicing and serving.

Notes

For added flavor, sprinkle fresh basil on top before serving.
