- 2 pounds boneless, skinless chicken breasts
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 tablespoons blackened seasoning
- 2 cups all-purpose flour
- 1 cup buttermilk or whole milk
- 2 large eggs
- 2 cups peanut oil
- 2 tablespoons cayenne pepper
- 1 tablespoon dark brown sugar
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 4 slices white bread
- 1 cup sliced pickles
Instructions
- Pat the chicken breasts dry with paper towels and set aside.
- In one shallow bowl, combine the flour with salt and pepper.
- In a second bowl, whisk together the eggs, buttermilk, and Frank’s Red Hot sauce.
- In a third bowl, combine the remaining flour with the blackened seasoning.
- Coat each chicken breast in the seasoned flour, then the buttermilk mixture, and again in the seasoned flour.
- Heat peanut oil to 325°F.
- Fry 2-3 pieces of chicken at a time for 15-18 minutes or until golden brown.
- Transfer cooked chicken to a wire rack to drain excess oil.
- Whisk together the ingredients for the Nashville Hot Sauce in a bowl.
- Brush sauce over the fried chicken or pour it on.
- Serve on sliced white bread with pickles.
